SPINACH CASSEROLE 
2 (10 oz.) pkgs. frozen leaf spinach
1 can cream of mushroom soup
1/3 c. skim milk
3/4 c. shredded Cheddar cheese (you can use the lite type)
1/2 c. low-fat yogurt (plain)
2 tbsp. butter
Salt and pepper to taste
Durkee fried onion rings

Cook spinach according to package; drain well. Combine soup, milk, cheese, yogurt, butter, salt and pepper. Simmer 2-3 minutes. Pour over spinach and mix well.

Put in casserole or baking dish. Top with onion rings. Bake 30 minutes at 350 degrees.

Casserole can be put together early or the day before and baked prior to serving. (Heat longer if prepared earlier.)
