SPICY PECAN CRUNCH FLOUNDER 
3/4 c. uncooked oats
1/4 c. chopped pecans
2 tsp. paprika
1 3/4 tsp. onion powder
1 3/4 tsp. garlic salt
1 tsp. thyme
1/4 to 1/2 tsp. ground red pepper
3 tbsp. butter, melted
1 egg white, slightly beaten
1 1/2 lb. boneless, skinless flounder or sole, thawed

Heat oven to 425 degrees. Combine first 7 ingredients. Add butter and mix well. Dip fish into egg whites and place in ungreased 15x10 inch baking dish. Sprinkle oat mixture over fish and bake approximately 15 to 20 minutes. Turn heat to broil and broil 1 to 2 minutes or until golden brown. Serves 6.
