BEST-OF-BRAN MUFFINS 
This is an excellent recipe for dieters - healthy heart watchers - diabetics.

3 c. bran cereal (All-Bran, 100% Bran, Raisin Bran, Oatmeal, Crispy Wheat & Raisins, Grape Nuts (reg. or flakes) and/or any combination of the above to yield approx. 3 c.)
1/2 c. olive oil
1 c. or more raisins
1 c. boiling water
2 eggs, lightly beaten
2 c. lowfat milk
1/4 c. molasses
2 1/4 c. whole wheat flour
2 1/2 tsp. baking soda
2 tsp. baking powder
3 tsp. cinnamon

OPTIONS:

4 tsp. sugar or 5-6 packets of Sweet 'n Low or 1/4 c. honey

3 or 4 bananas

If you use bananas, mash them, then sprinkle and mix the baking soda over them before adding them to Step 2 below.

Omit the molasses if using any of the options.

In large bowl, combine the cereal, oil and raisins. Pour boiling water over them, mix and let cool slightly.

In a small bowl, combine the eggs, milk and molasses. Add this to the party cooled mixture.

In another bowl, combine the flour, soda, powder and cinnamon. Add this mixture to the cereal.

Preheat oven to 350 degrees. Spray or grease muffin cups. Drop batter into cups three fourths full.

Bake for 20 to 25 minutes. When cooled slightly, remove from pan and place on rack to cool completely. Makes 24 muffins.

Changes I made. No salt in recipe so I added 1/4 tsp. I only had 1 1/4 cups of whole wheat flour so added 1 cup white. I felt there was way too much cinnamon so I used only 1 tsp. Made 15 large muffins. When I make again I will add something to sweeten a bit. Either honey, applesauce, or a banana and cut down on the milk accordingly.
