8 lb. cooking apples, peeled, cored and sliced (24 c.) 1 to 1 1/2 c. sugar In a kettle combine apples and 2 cups water. If desired, add 10 inches stick cinnamon. bring to a boil. Cover and simmer for 8 to 10 minutes; stir often. Remove cinnamon. Press apples through a food mill or sieve. Return pulp to kettle. Stir in sugar. If necessary, add 1/2 to 1 cup water for desired consistency. Bring to a boil. Cool. Spoon into freezer containers, leaving headspace. Seal, label and freeze. Makes 6 pints. |
