LAMB CHOPS 
8 (1 inch thick) loin lamb chops
Garlic
Orange marmalade
Honey
Rosemary
Thyme

Secure tails to chops with either toothpicks or Kitchen Twin. In side of chop, make a small slit with a small boning knife and insert 1/4 clove of whole garlic.

Mix equal parts rosemary and thyme and sprinkle 1/2 tablespoon on each chop.

Mix equal parts orange marmalade and honey together and spread 1 tablespoon on each chop and let rest at room temperature for 1 hour. Cook over hot grill until medium, approximately 4 minutes each side. Serve with wild rice. Serves 4.
