BROCCOLI POTATO CASSEROLE - BOCA
GRANDE STYLE
 
This recipe is from my Mom at Boca Grande Florida in the 40s and 50s. So simple, so good! This is a recipe that you can change to suit your taste and then have your own "family classic".

3 cups chopped broccoli, cooked
3 cups mashed potatoes
1 egg
1 cup milk
1 (or more) cups leftover roast beef, ham, crispy bacon, etc., chopped
1 cup shredded cheese (I like mild-sharp but its your choice)
1 can French's fried onions (store brand okay)
salt and pepper, to taste

Lightly grease a Pyrex baking dish. Place broccoli in bottom. Beat the egg into 1 cup of milk. Pour over broccoli. Add a little salt and black pepper. Place chopped meat on top and sprinkle with cheese. Put mashed potatoes on top, about 1-inch thick. Place in 350°F oven until it starts to bubble. Then spread fried onions on top. Bake further until brown, watch them, don't let them burn.
