POTATO BROCCOLI CASSEROLE 
1 1/2 lbs. potatoes
1/4 c. butter
3 tbsp. flour
2 1/2 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1 bunch broccoli
1/2 c. grated Parmesan cheese

Preheat oven to 350 degrees. Cut potatoes in thin slices. Heat butter in saucepan. Sprinkle with flour, cook for 2 minutes. Add the milk and seasonings. Simmer until boiling. Remove from heat. In a large greased casserole dish, layer the potatoes alternating with sauce and broccoli pieces. Finish with a top layer of sauce. Sprinkle with Parmesan. Bake, covered for 15 minutes. Then bake an additional 5 minutes uncovered. Cool and serve.

Great recipe! I added a little onion, paprika, and garlic to the roux then finished with slices of swiss cheese and crushed Ritz crackers on top.
This is a good and filling meal for those meatless nights.

I am baking this right now, so far its taken 1 hour, I sliced my potatoes thinly, the recipe must have made them as thin as potato chips! I took Kay's Swiss cheese idea and added it also to the layers... My potatoes made 3 layers and I needed to make more white sauce... It smells great, can't wait for it to be done and the potatoes to be tender.

Great recipe. But I think the baking time must be off. As Patricia already pointed out, even after an hour the potatoes are still not cooked through. Perhaps the original recipe meant 1 hr and 15 min covered and 5 uncovered. That fits more with my experience. It's also nice with diced bacon throughout.
