CHICKEN AND RICE, BOCA GRANDE | |
We had this a lot during WW2. My Mom would double on the rice and could feed a large family. Basic recipe and easy to experiment with. Boca Grande, Fla is where we lived. 1 whole chicken 4 cups water salt and pepper bay leaf 1 clove garlic 2 cups white rice Boil chicken with seasoning 'til it's falling off the bone done, Cool and remove from bones. Discard skin. Measure broth and make sure you have 4 cups. Add rice and cook until tender. Return chicken to pot. If you don't eat it all it's even better the next day. Submitted by: John Lane |
