CHEESE SQUASH CASSEROLE | |
1 lb. yellow squash (4-5 med. ones) 1 lg. onion, chopped 1 egg, beaten 1/4 c. cream or evaporated milk 1 c. shredded cheddar cheese 2 tbsp. butter, softened 1/2 tsp. salt 1/8 tsp. pepper 1/2 c. cracker crumbs 1/4 tsp. paprika Cook squash and onion in small amount of water; drain. Beat egg, blend in cream, then add cheese, butter, salt and pepper. Mix well with squash and onion. Pour into a greased 2 quart casserole. Top with cracker crumbs and paprika. Bake at 350 degrees about 25 minutes or until crumbs are brown. |
