ROLLED GINGER COOKIES (Soft) 
2/3 c. shortening
1/2 c. sugar
1 egg
1 c. Br'er Rabbit molasses
1 tsp. vinegar
2 tbsp. cold water
4 1/2 c. flour
1 tbsp. baking soda
1 tbsp. ginger

Cream shortening and sugar. Add beaten egg, molasses, vinegar and water. Sift flour, soda and ginger and add to mixture. Stir in as much flour as you can and knead in the remainder. Roll out thick or thin. Sprinkle with sugar and bake in a moderate oven.
