3 lg. eggs 1/2 c. soft butter 1 c. unsweetened pineapple juice 2 1/2 c. unbleached white flour 3 c. grated carrots 1 tsp. baking soda 2 tsp. baking powder 1 tsp. nutmeg 1 tsp. cinnamon TOPPING: 1 c. crushed, drained pineapple 1 tsp. cinnamon Beat together eggs, butter and pineapple juice. Add flour, soda, baking powder and spices. Beat well. Stir in grated carrots and mix well. Pour mixture into greased and floured 9x13 inch pan. Mix drained pineapple and cinnamon and sprinkle over cake mixture. Bake 25-30 minutes at 350 degrees or until brown. |
