SQUASH CASSEROLE 
2 c. yellow squash
3/4 stick butter
2 eggs, beaten well
1 tsp. salt
1/2 tsp. pepper
1 c. chopped onions
1 c. evaporated milk
2 c. cracker crumbs or crumbled saltines
1 c. grated cheddar cheese

Cook squash and onions. Mash well. Add other ingredients, except cheese and mix well. Pour into a greased casserole dish. Top with grated cheese. Bake at 375 degrees for 40 minutes.
