SQUASH CASSEROLE 
2 lbs. squash, sliced
1 onion, minced
1 clove garlic, minced (optional)
1 c. cheese, grated
3 egg yolks
2 whole eggs
3/4 c. crushed crackers (saltine-type)
2 tsp. nutmeg
1/4 tsp. salt
1/2 tsp. pepper
1/2 c. mayonnaise (lite) or sour cream

Preheat oven to 400 degrees. Cook vegetables in microwave 5-7 minutes, or until tender, stirring once. Add cheese, egg yolks, eggs, crackers, spices, and mayonnaise or sour cream to mixture, and mix well; place in 9 x 13 inch baking pan, cook 1 hour.

Since microwave ovens vary in power, you may need to adjust your cooking time.
