SQUASH CASSEROLE 
2 c. cooked squash, mashed
2 eggs, beaten
3/4 c. mayonnaise
1 c. grated cheese
10 green onions, chopped
1/2 stick butter
1 tsp. salt
1 tsp. pepper
1/2 c. Ritz crackers, crushed

Saute chopped green onions in butter until tender. Add other ingredients except cracker crumbs. Put in buttered dish and top with cracker crumbs. Bake 25 to 30 minutes at 400 degrees.
