CHERRY MUFFINS 
1 c. sugar
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten
3/4 c. milk
1/4 tsp. oil
2 c. whole pitted cherries, drained well

Sift dry ingredients together. Combine liquids together and add to dry ingredients. Fold cherries. Recipe also works for blueberries and other fruit. Bake at 425 degrees for 25 minutes. 18 medium muffins.

The recipe was nice and simple. I added some extra sugar too. The only recommendation is to lower the cooking temp because at 10 minutes they were already starting to burn at 425°F. I would recommend more the 350°F range and about 20 minutes of baking time.

I made this recipe but used a half of a can of cherry pie filling/topping in the batter. And used the remaining cherry filling to top each muffin. It made the muffins sweeter without adding more sugar directly :)
