CHERRY PECAN MUFFINS 
2 c. all-purpose flour
1/4 c. granulated sugar
2 lg. eggs, lightly beaten
3/4 c. milk
1 c. pecans, coarsely chopped
Finely grated rind of 1 lemon
1/2 tsp. salt
2 tsp. baking powder
1/2 c. butter, melted and cooled
1 tsp. vanilla extract
1 c. dried red tart cherries

Preheat the oven to 400 degrees. Lightly grease the muffin pans. In a large bowl stir together the flour, salt, sugar, and baking powder. In another bowl combine the eggs, butter, milk, and vanilla and mix well.

Pour the egg mixture into the dry mixture; add the pecans, cherries, and lemon rind and stir until just blended. Spoon the batter into the greased muffin pans and bake 20 minutes until golden.
