BAKED APPLES WITH HOT CINNAMON
SAUCE
 
4 Golden Delicious apples, peeled
1/4 c. chopped walnuts
1/4 c. water
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. raisins
1/4 c. lemon juice
1 tbsp. brown sugar
1 tbsp. butter

Remove skin of apples one third way down from top. Place in 8" round baking dish. Combine raisins, walnuts, sugar and butter. Stuff centers of apples with raisin mixture. Combine lemon juice, water, cinnamon and nutmeg. Pour over and around apples. Bake, uncovered at 350 degrees for about 1 hour or until apples are done. Top with Hot Cinnamon Sauce:

1/4 c. sugar
3 tbsp. flour
1 c. water
3 tbsp. lemon juice
1 tbsp. butter
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Mix sugar and flour. Add water and lemon juice. Cook until thickened. Add butter, cinnamon and nutmeg. Makes 1 1/4 cups.

I made just the sauce from this recipe, as I had an apple pie and ice cream but wanted a good cinnamon sauce to eat over the apple pie, let me tell you it is wonderful, and makes a wonderful addition to ice cream alone, but especially over hot apple pie! I did add 3 tbs brown sugar as the lemon flavor was a bit too strong, and put some chopped walnuts over the ice cream before drizzling the sauce over the top and it's wonderful! Next time will try the whole recipe, but the sauce is wonderful!
