“CHICKEN FETTUCCINE” IS IN:
NEXT RECIPE:  CHICKEN FRICASEE

CHICKEN FETTUCCINE 
1/2 cup (1 stick) butter
2 lb. boneless, skinless chicken breast
1 cup half & half or cream
1/3 cup Parmesan cheese
1/4 cup green onions, chopped
2 cloves garlic, minced
1 tbsp. lemon juice

Melt butter in skillet and sauté chicken which has been cut into 2-inch chunks. When chicken begins to take on color, add garlic and green onions.

Add remaining ingredients except lemon juice, cover and simmer over low heat until mixture thickens and chicken is tender.

Serve over cooked and drained fettuccine. Sprinkle with lemon juice and additional Parmesan cheese if desired.

We had a snowstorm back in February, and my bff and I tried this recipe..Two nights in a row! Added some spinach, tomato and mushroom and everyone in the house delighted in it! Took me two months to find it again, and now that I have I want to thank CM for the great start to a new family favorite!

It tasted really good. I added Italian seasoning mushrooms and cherry tomatoes to it but it would be good without it too. It makes either a good simple pasta or a good base for you to experiment.

This is really good and so fast. I used already cooked chicken breast meat, cut into 1-inch pieces. I have a daughter who is vegetarian, so I fixed without chicken for her, then added the pre-cooked meat and heated through for everyone else. This is great for a fast and really good meal after work!

Cooked this today and served it over cauliflower, it was delish! Will definitely cook this again, may use broccoli next time.
