HAWAIIAN WEDDING CAKE 
2 c. flour
2 c. sugar
2 eggs
2 tsp. baking soda
1 c. chopped nuts
1 c. coconut
1 (20 oz.) can crushed pineapple with juice

Mix all ingredients and pour into greased 13 x 9 inch pan. Bake at 350 degrees for 40-45 minutes. Cool.

HAWAIIAN WEDDING CAKE FROSTING:

1 (8 oz.) pkg. cream cheese
1 1/2 c. powdered sugar
1 stick butter
2 tsp. vanilla

Blend well. Frost cool cake. Garnish with chopped nuts, if desired.

The cake is super moist and delicious. I made it without the nuts and added 1 can coconut milk, 1 tsp. vanilla, and 1 tsp. almond extract to the cake batter. I also baked it in 2 8-inch round cake pans and layered the cake. As filling I used the cream cheese frosting mixed with chopped mariscino cherries. The results were fantastic. Everyone at our luau thought it was great. I will definitely add this cake to my repetoire.
