EASY CHOCOLATE PUDDING 
3/4 c. granulated sugar
1/4 c. unsweetened cocoa powder
1/4 c. cornstarch
2 c. skim milk
3/4 tsp. vanilla extract

Sift sugar, cocoa, powder and cornstarch together in a heavy saucepan. Mix together. Slowly add milk over the dry ingredients, mixing well with a whisk. Bring to a boil over medium heat, whisking constantly, until pudding thickens and comes to a boil. Continue to whisk until desired thickness. Remove from heat; stir in the vanilla. Serve warm or chill before serving. May add 1-2 tablespoons. Serves 6. Butter if desired.
