SHRIMP SALAD WITH CORAL DRESSING 
2 c. cooked, peeled & deveined shrimp
1 1/2 c. rice, cooked
1/2 c. celery, sliced
1/2 c. unpeeled cucumbers, chopped
1/4 c. chives, chopped
1/3 c. mayonnaise
1/4 c. sour cream
1 tbsp. chili sauce
1/4 tsp. onion salt
1/8 tsp. pepper
1 1/2 tsp. tarragon vinegar
Salad greens
Horseradish (optional)
Lemon wedges

Toss shrimp, rice, celery, cucumbers and chives together. Blend ingredients for dressing. Pour over shrimp mixture and toss thoroughly. Chill. Serve on salad greens. Top with a little horseradish, if desired and garnish with lemon wedges. 6 servings.
