GOURMET POTATOES 
6-7 med. potatoes
1/4 c. butter
1/4 c. finely chopped green onion
Butter
2 c. mild shredded Cheddar cheese
1 1/2 c. dairy sour cream
1 tsp. salt
1/4 tsp. pepper
Paprika

Cook potatoes in skins; cool and peel and shred coarsely. In saucepan, over low heat, combine cheese and butter until almost melted. Remove from heat; blend in sour cream, onion and seasonings. Turn into greased 2 quart casserole; dot with butter and sprinkle with paprika. Bake uncovered at 350 degrees for 30 minutes or until heated. Serves 10-12.
