GOURMET POTATOES 
6 med. potatoes
8 oz. shredded cheddar cheese
1 1/2 c. sour cream
1/3 c. chopped onion
1 tsp. salt
1/4 tsp. pepper

Cook potatoes in skins until done. Cool, peel and grate. Melt 1/2 cup butter and cheese together. Remove from heat and stir in potatoes, sour cream, onions, salt and pepper. Pour into greased 13 x 9 inch dish or casserole. Sprinkle with paprika. Bake uncovered for 30 minutes at 350 degrees. Can be made in advance and will freeze well for about a week before baking.
