GOURMET POTATOES #1 
6 med. potatoes
2 c. shredded cheese
1/4 c. butter
1 1/2 c. sour cream
1/2 c. onion or chives
1 tsp. salt
1/4 tsp. pepper
2 tsp. paprika

Cook potatoes in skins. Cool, peel and shred coarsely. Saute butter and onions in saucepan. Add cheese and melt over low heat. Remove and blend in sour cream, salt and pepper. Fold in potatoes. Put in 2 quart greased casserole. Dot with butter and paprika. Bake uncovered at 350 degrees for 30 minutes or in a crockpot for 3 hours.
