GOURMET POTATOES 
1 med. yellow onion, chopped and sauteed
2 lg. bags frozen hash browns, thawed
2 lb. box Velveeta cheese
2 c. mayonnaise
1/2 c. milk
2 c. chopped cooked bacon

Combine cheese (shredded), mayonnaise and milk in saucepan. Cook slowly until cheese is melted. Blend well. Stir in onions and potatoes. Pour into large greased pan. Sprinkle bacon over top.

Bake 30-40 minutes at 350 degrees. Serves 12-15. May be prepared and kept in refrigerator several hours before baking. Freezes well either before or after baking.
