PUMPKIN BREAD PUDDING 
8 slices bread
3 eggs, slightly beaten
1 can (16 oz.) pumpkin
2 1/2 c. milk
3/4 c. sugar
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. vanilla extract
3/4 c. raisins

Preheat oven to 375 degrees. In 2 quart casserole, crumble bread. Combine remaining ingredients. Stir into bread.

Set casserole in larger casserole or baking dish; fill larger dish with hot water. Bake 70 minutes, or until knife inserted near center comes out clean.

Serve warm or chilled with stirred cream. Makes approximately 8 servings. Stirred cream: soften 2 cups vanilla ice cream; stir until smooth.
