“SHRIMP SCAMPI” IS IN:

SHRIMP SCAMPI 
3/4 lb. medium shrimp, shelled and deveined
6 tbsp. butter
1 tbsp. green onion, minced
1 tbsp. salad oil
5 cloves garlic, minced
2 tsp. lemon juice
1/4 tsp. salt
2 tbsp. parsley, minced
1/4 tsp. lemon peel, grated
1 dash hot pepper sauce

Pat shrimp dry with paper towels; set aside. Melt butter in a wide frying pan over medium heat. Stir in green onion, oil, garlic, lemon juice, and salt; cook until bubbly. Add shrimp to pan and cook, stirring occasionally, until shrimp turn pink (4 to 5 minutes). Stir in parsley, lemon peel, and hot pepper seasoning.

Makes 2 servings.

Delicious, use EVOO instead of dairy and add fresh or frozen peas.. Great over pasta or brown rice.
