SQUASH CASSEROLE 
3-4 lb. yellow crookneck squash
1 med. chopped onion
2 bunches green onions, chopped
1 stick butter, melted
1 1/2 c. milk
2 eggs
Approximately 1/2 box Ritz crackers, crushed
Salt & pepper to taste
1 1/2 c. grated med. Cheddar cheese

Clean and cut up squash in broiler with water and salt. Cook until tender. Cook both onions in melted butter until tender. Drain squash and mix with onions, butter, salt and pepper.

In 12 x 12 x 3 inch baking dish; layers of crushed Ritz crackers, squash mixture and grated cheese. Beat 2 eggs and milk, pour over casserole. Bake at 350 degrees for approximately 45 minutes. Serves 12 people.
