“OATMEAL COOKIES” IS IN:

OATMEAL COOKIES 
2 cups brown sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1 cup shortening
1 cup flour
3-5 cups rolled oats
1 cup golden raisins, soaked in rum
1 cup chopped walnuts or pecans
1 teaspoon baking soda

Beat together shortening and sugar until creamy. Add eggs and vanilla and beat well. Sift flour, salt, and baking soda together onto a sheet of parchment or wax paper; use the paper as a funnel to add these dry ingredients to the sugar mixture.

Stir in oats, raisins and nuts. Use only enough oats to give the consistency of a good drop batter.

Drop by tablespoons onto a greased or silicone or parchment-lined cookie sheet. Bake for about 10 minutes. Remove from oven and cool cookies on a wire rack.

Yield: 50-60 cookies
