BUTTERSCOTCH OATMEAL COOKIES 
1 c. (2 sticks) butter
3/4 c. brown sugar
3/4 c. white sugar
2 eggs, beaten
1 tbsp. hot water
1 1/2 c. all-purpose flour
1 tsp. baking soda
walnuts, shelled and chopped
2 c. quick-cooking oatmeal
1 tsp. vanilla
1 pkg. butterscotch bits

Cream butter and sugars. Add beaten eggs and hot water. Add flour mixed with baking soda. Add chopped nuts, oatmeal and vanilla. Then add butterscotch bits. Drop by teaspoonfuls on greased cookie sheet and bake at 375°F for 10-12 minutes.
