BUTTERSCOTCH OATMEAL REFRIGERATOR COOKIES | |
1 c. shortening 1 c. white sugar 1 1/2 c. flour 1 tsp. salt 1 tsp. vanilla 2 eggs 1 c. brown sugar 1 tsp. baking soda 3 c. quick oats May use 1 tsp. walnut flavor Cream shortening and sugars together. Add salt, vanilla and beaten egg. Sift soda and flour together and add oatmeal, add to creamed mixture and mix until smooth, then roll into 2 rolls (2 inches in diameter) or, chill several hours and slice. I'm not careful how I mix them as they always come out good. Can be put in freezer section of refrigerator to partially freeze. They are easier to slice. Bake at 350 degrees on greased cookie sheets for 10 to 13 minutes. Dough will keep and can bake whenever you want freshly baked cookies. |
