OATMEAL BUTTERSCOTCH COOKIES 
1 c. flour
1/4 tsp. salt
1/4 tsp. nutmeg
1 c. butter, softened
2 eggs
3 c. oats, uncooked
1 tsp. baking soda
3/4 tsp. cinnamon
3/4 c. sugar
3/4 c. brown sugar, packed
1 tsp. vanilla
1 c. butterscotch chips

Preheat oven to 375 degrees. In a small bowl, combine flour, baking soda, salt, cinnamon, and nutmeg; set aside. In large bowl, combine butter, sugar, brown sugar, eggs, and vanilla; beat until creamy. Gradually add flour mixture. Stir in oats and butterscotch chips. Drop by teaspoonfuls onto ungreased cookie sheets. Bake 7 to 8 minutes for chewier cookies; 9 to 10 minutes for crisper cookies. Makes about 48 (3 inch) cookies.
