BUTTERSCOTCH OATMEAL COOKIES | |
1 heaping tbsp. Crisco 1 stick butter 1 c. sugar 1 c. raisins 2 c. oatmeal 2 eggs 2 c. flour 1/2 tsp. baking soda 1 tsp. baking powder 1 tsp. cinnamon Pinch of salt 1/2 c. milk 1 tsp. vanilla Nuts if desired Cook raisins in 1/2 cup water for 5 minutes, cool and drain. Cream shortening and sugar: add eggs lightly beaten. Add raisins, milk, and oatmeal. Sift flour, salt, soda, baking powder, and cinnamon together. Add to first mixture. Add 3/4 cup butterscotch chips. Drop on greased cookie sheet by spoonfuls. Bake in 400 degree oven. |
