POTATO CHIP - BUTTERSCOTCH
COOKIES
 
1 c. shortening
1/2 c. sugar
1 c. brown sugar
2 eggs
2 tsp. vanilla
2 c. plus 4 tbsp. flour
1 tsp. baking powder
1/2 tsp. salt
2 c. crushed potato chips, plain
1 (8 oz.) pkg. butterscotch chips

Cream shortening and sugars, add eggs and vanilla. Combine flour, baking powder and salt and add to sugar mixture. Stir in crushed potato chips and butterscotch chips. Make dough into walnut size balls on cookie sheet and bake at 350 degrees for 8-10 minutes.
