1/2 c. butter 1/2 c. packed brown sugar 1/4 c. sugar Turn oven to 375 degrees. In a large mixer bowl beat butter with electric mixer on medium speed until softened (about 30 seconds). Add brown sugar and sugar and beat until fluffy. 1 egg 1/4 tsp. almond extract (optional) Add egg and, if desired, almond extract. Beat well. 1 c. all purpose flour 1/2 tsp. baking soda 1/4 tsp. salt In a medium mixing bowl stir together flour, baking soda, and salt. With mixer on low speed gradually add the flour mixture to the butter mixture, beating until well mixed. 1 c. quick cooking rolled oats 1/2 c. semisweet chocolate pieces 1/2 c. chopped maraschino cherries 1/2 c. coconut With a wooden spoon stir in oats, chocolate pieces, chopped cherries, and coconut. Drop dough by rounded teaspoons about 2 inches apart onto ungreased cookie sheet. Bake in the 375 degree oven 8 to 10 minutes or until golden. Let cool on cookie sheets 1 minute. |
