CREAM OF WILD RICE SOUP 
1 c. cooked wild rice
1/2 c. diced onion
2 c. diced celery
4 c. chicken or turkey broth
2 c. diced carrots
1 tsp. salt
1/8 tsp. pepper
2 tsp. chicken base or bouillon
1 1/2 c. diced chicken or turkey, cooked
1 c. sliced mushrooms, drained
2 c. warm milk
1/2 c. melted butter
3-4 tbsp. flour

Add flour to melted butter to make a paste. Set aside. Cook onions, celery, and carrots in broth until tender; add salt, pepper, and chicken base. Add chicken, wild rice, and mushrooms. Gradually add warm milk to flour and butter paste. Whip until thick, add to soup mixture very slowly to thicken soup. Very good. Serves 10-12 people.
