CREAM OF BROCCOLI SOUP 
10 oz. chopped broccoli
1/4 c. flour
1/4 c. finely chopped onion
5 c. whole milk
1 1/2 c. water
4 oz. shredded American cheese
1/2 c. butter
1 tsp. seasoned salt
1 tsp. lemon pepper
1 tsp. chicken base or chicken bouillon cube

Cook broccoli and onion with 1/2 cup water until tender. Melt butter, remove from heat and gradually stir in flour to make a smooth paste. Slowly bring milk and 1 cup water to a boil, add cheese and stir until cheese melts.

Gradually add flour and butter mixture, stirring constantly, until slightly thickened. Remove from heat. Add broccoli, onion, salt, pepper and chicken base. Stir until well blended.

PAUL'S FAVORITE WILD RICE SOUP

4 strips bacon
1/2 c. fine diced onions
1/2 stick butter
1/2 c. diced celery
2/3 c. sliced mushrooms
1/3 c. flour
4 c. chicken broth
1 1/2 c. cooked wild rice

Render bacon lightly. Add onions and saute. Add butter, celery and mushrooms. Cook until nearly tender. Add flour and cook. (Makes a roux.) Add stock and bring to a boil. Add wild rice and bring to boil again. Add cream and season to taste.
