EASY CASSEROLE 
1 pkg. (box) Au Gratin or scalloped potato mix (any brand)
1-2 c. cooked chicken or turkey, cut into sm. pieces or browned and drained hamburger
1 c. frozen peas, French style green beans or broccoli, thawed and drained
1 sm. can sliced mushrooms, drained

Prepare potato mix according to directions. Add remaining ingredients. If mixture looks too dry, add 1/4 cup water or milk, 2-3 pats of butter on top, is good too. Bake according to directions on the box.

This was a great casserole. I made it last night for dinner. At first I thought it didn't have much flavor, like it needed more cheese or more salt and pepper. But it wasn't bad. I had leftovers for lunch today, and the flavor was great today. Thank you for the recipe. It was delicious.

Easy, flexible and quick. By adjusting the ratio of veggies, using skim milk and soy burger crumbles, I've made this into quite a healthy dinner. Yum!
