CHEESY POTATOES 
1 thick slice Velveeta cheese
1 thick slice onion
1 to 2 slices tomatoes
1 slice green pepper (opt.)
Salt & pepper to taste
1 tbsp. Parmesan cheese
1 tsp. Bleu cheese
2 pats butter

In a square piece of foil, put 1 baking potato, cut a V wedge from top the whole length of the potato. Fill the V with the 8 fillings. Press top wedge back on top. Wrap in foil. Bake 1 1/2 hours on grill over indirect heat.

This can be made in casserole by cutting the potato, peel and all into chunks and layer filling as before finishing with layer of potato. Cover and bake in oven 1 1/2 hours at 375 degrees.
