CHEESY POTATOES 
8 potatoes, sliced thin
1/2 c. chopped onion
1 1/2 c. milk or 1 can evaporated milk (creamier)
1 stick butter, melted
1 sm. box Velveeta cheese, melted in microwave

In a casserole dish place potatoes - salt and pepper to taste. Add onions and butter and milk - toss until everything is coated. Pour cheese over top and toss again. Cook at 350 degrees around 30 minutes, then carefully stir (add more liquid (milk) if too dry). Then cook until tender and the top is brown and bubbly. Usually 30 minutes longer. Check several times. Not to overcook.

Since microwave ovens vary in power, you may need to adjust your cooking time.
