BLUEBERRY OR BLACKBERRY CREAM
PIE
 
1 qt. blueberries or blackberries, washed
1 c. sugar
1/4 tsp. salt
3 tbsp. cornstarch
1 pt. whipping cream
2 c. powdered sugar
2 tsp. vanilla
1 (8 oz.) pkg. cream cheese, softened
2 (9") pie shell, baked

Combine the blueberries or blackberries, sugar, salt and cornstarch. Mash and cook the berry mixture over medium heat until thickened. Remove from heat and cool. Whip the cream and combine it with the powdered sugar, vanilla and cream cheese. Pour into pie crusts and top with the cooled berries. Chill several hours before serving. Serves 12-16.
