SHERRY'S BLACKBERRY CREAM PIE | |
1 cup sugar 1/3 cup all-purpose flour 2 large eggs, lightly beaten 1 1/3 cups light sour cream 1 tsp vanilla 3 cups blackberries 1 unbaked 9-inch pie shell Preheat oven to 400°F. In a bowl, combine sugar, flour, eggs, dairy sour cream and vanilla until smooth. Toss in blackberries and stir well. Spoon into pie shell. Bake at 400°F for 30 to 35 minutes or until set. PECAN TOPPING: 1/3 cup all-purpose flour 1/3 cup packed brown sugar 1/4 cup chopped pecans 3 tbsp. butter, softened In a bowl, combine flour, brown sugar, pecans and soft butter, mix well. Sprinkle over pie. Return pie to oven for 10 minutes. Serve topped with whipped cream. Submitted by: Sherry Monfils |
