SQUASH CASSEROLE 
1 qt. squash
1 small onion, chopped
1/4 c. butter
1 tube Ritz crackers
1/4 c. milk
8 oz. Cheddar or Velveeta cheese

Boil squash in small amount of water until tender. Sauté onion in butter. Mix 1/2 Ritz crumbs, cheese, milk, smashed squash and sautéed onions. Stir to blend. Place in casserole dish (greased). Crumble 1/2 tube Ritz and place on top.

Bake at 350°F uncovered until slightly browned.

I made this recipe one day in a pinch (having only Velveeta cheese in the fridge). I only altered it with 1 egg and 1/4 cup mayonnaise, which I got from another recipe and figured, why not!? It definitely turned out better than I thought it would and since I was looking for a squash recipe in the 1st place, I would recommend this one...
