ITALIAN SELF FROSTING COOKIES 
2 1/4 c. flour
1/2 tsp. double acting baking powder
1/4 tsp. salt
4 lg. eggs
2 c. sugar
1/2 tsp. anise flavor

Sift together flour, baking powder and salt several times. Beat eggs at low speed until frothy. Change to medium speed for 10 minutes. Beat in sugar, 1 tablespoon at a time, about 5 minutes. Turn mixer back to low speed and beat in sifted ingredients. Keep beating 15 minutes. Blend in anise flavor. Butter 5 or 6 cookie sheets. Drop 1 teaspoon dough about 1 inch apart. Let stand in cool place several hours or overnight. Top of each should be dry to touch. Bake at 325 degrees 12-14 minutes. Makes 12 dozen 1 1/2 inch cookies.
