4 or 5 tsp. vegetable oil
1 1/2 c. thinly sliced potatoes
3/4 lb. sweet or hot Italian sausage, cut in small pieces
1/2 c. chopped onion
1/2 c. chopped green peppers
6 eggs
1/2 c. milk
3/4 tsp. baking powder
1/4 c. grated Parmesan cheese
1/2 c. canned tomato sauce
4 oz. shredded Mozzarella cheese

Use vegetable oil, grease 2 quart casserole. Arrange next 4 ingredients in casserole and bake in moderate oven (375 degrees) 35 to 40 minutes. Beat together next 4 ingredients and salt and pepper to taste. Pour over first mixture; reduce heat to 325 degrees and bake 30 minutes. Drizzle with sauce and spread Mozzarella over top. Bake 10 minutes more.
