SALMON LOAF 
2 lg. cans salmon
3 eggs
Soda crackers
Salt and pepper to taste
Dash of lemon juice
Onion, chopped

Remove skin and bones from canned salmon. In large bowl, mix salmon (with liquid from can), eggs, about 2 cups cracker crumbs (rolled), salt and pepper to taste, lemon juice and onion to taste. Mix together with hands. Mixture should hold together to form a loaf or patties. Add a little milk if more moisture is needed. Pat salmon mixture into greased 8-inch pan or large loaf pan. Bake 45 minutes at 350 degrees, until lightly browned. May also form into individual patties and fry.
