SALMON LOAF WITH CHEESE SAUCE 
1 (15 oz.) can salmon
2 eggs
1/2 c. light mayonnaise
1/4 c. light sour cream
1/2 c. grated carrot
1/4 to 1/2 chopped onion
1/2 c. finely chopped celery
1/2 c. chopped green pepper
1/4 c. bread crumbs
1 tbsp. dried parsley or fresh
1 tbsp. lemon juice
1/2 tsp. salt and pepper
Few drops hot sauce

CHEESE SAUCE:

1 c. light sour cream
1/2 c. grated Cheddar cheese
1 tsp. dill weed

Beat eggs. Blend in mayonnaise and sour cream. Gently fold in salmon. Add remaining ingredients and blend well. Put into greased loaf pan. Sprinkle paprika on top. Bake 40 minutes at 350 degrees. You may combine cream cheese and dill weed in saucepan over low heat. Simmer until cheese melts. Keep warm on low heat and serve over loaf.
