RAISIN ORANGE BREAD 
5 to 5 1/2 c. flour (1/2 bread and 1/2 unbleached is best)
2 pkg. dry yeast
1 c. milk
1/2 c. sugar
1 1/2 c. raisins, soak and drain and they won't knead out
1/2 c. butter
1 orange peel, finely shredded
1 tsp. ginger
2 eggs

In large bowl, combine 2 cups flour and yeast. In saucepan, heat milk, sugar, butter, orange peel, ginger and 1/4 cup water, plus 1 1/2 teaspoon salt, until just warm! Add to flour and add eggs. Beat on low speed with electric beater for 30 seconds. Beat on high speed for 3 minutes. Add raisins. Use spoon and add rest of flour. Knead for 6 minutes. Let rise in warm place for about an hour.

Make into 2 loaves and let rise about 30 minutes or until they are slightly above pan. Bake for 45-50 minutes in 350 degree oven. Cover with aluminum foil after 20 minutes.
