SALMON LOAF WITH CHEESE SAUCE 
1 can salmon
1 1/2 c. soft bread crumbs
1/2 c. chopped celery
3/4 c. milk
2 eggs, slightly beaten
1/4 c. crumbled blue cheese
1/4 c. minced onion
1 tbsp. lemon juice

Mix above ingredients. Form loaf and bake in loaf pan 1 hour at 350 degrees. Cover with the following cheese sauce:

In saucepan melt 2 tablespoons butter, blend in 2 tablespoons flour. Remove from heat; gradually add 1 1/4 cups milk. Cook, stirring until thickened. Remove from heat and stir in 2 cups shredded Cheddar cheese. Return to heat to melt cheese.
