AUNT SANDY'S CHILI | |
3 lbs. chili meat 2 lg. finely chopped onions Sear until meat is grey. Add to searing meat and onion mixture 15 ounce can tomato sauce and 1 cup water. Add: 4 heaping tbsp. chili powder 1 heaping tbsp. oregano 1 tsp. camino (cumin) 1 clove garlic, pressed 1 tsp. salt Black pepper to taste (opt.) 1 tsp. cayenne pepper 1 level tsp. paprika 1 dozen red peppers, chopped 4 or 5 serrano chili peppers, chopped (scrape seeds from peppers to reduce hot taste) Simmer for 1 hour and 15 minutes. Add thickening (2 heaping tablespoons flour mixed with water). Simmer additional 30 minutes. |
